Course units

Build confidence in cooking meat and poultry with this engaging, hands-on course designed for beginners. 

In a professional kitchen setting, you’ll learn essential skills such as knife techniques, seasoning, and mastering different cooking methods including roasting, pan-frying, and braising. 

Expert chefs will guide you through creating flavourful, perfectly cooked dishes while sharing tips on sourcing and preparation. 

With a focus on practical learning and creativity, this course helps you understand how to get the best from every cut. 

You’ll leave with the skills to prepare impressive, delicious meals for any occasion.

Course fees

This course is free for those who live within the York and North Yorkshire Combined Authority, earn less than £35k a year, and have not have studied any previous tailored learning courses with us. Students can only do one tailored learning course regardless of the discipline.

Full cost course fee: £250

This course is a practical, hands-on course and students will learn in a friendly and professional kitchen, under the guidance of our expert chefs.

Here at York College we have state-of-the-art training kitchens and a superb training restaurant, The Cookery.

After this course you could undertake any of the other York College Cookery School classes for your enjoyment.

If you were interested in gaining a formal qualification in catering, our tutors would be able to advise on suitable routes that are available on a full or part time basis.
