Who is this course aimed at?

This is for anyone interested in developing bread and pastry making techniques.  Learn how to develop skills of an artisan baker. This course can introduce you to some new kitchen skills and help you be more adventurous with different nutritious ingredients in preparing and cooking high quality breads and pastries. Sweet and savoury options are available to cover a variety of tastes.


An introduction to baking, discovering techniques for making bread, learn the ins and outs of truly great breads, with lots of mixing, kneading and baking using sourdough and yeast. Learn how to create and maintain the starter to how to use baker percentage to calculate your doughs ingredients, kneading methods, perfect shaping, judging when your loafs ready for oven and finally baking. The course includes basic cake batter, vegetable cakes, sweet pastry, choux pastry, crème pâtissière and tarts, with the chance to sample some of your creations and take the rest home to impress friends and family. There will also be opportunity to create savoury pastry dishes such as pies, tarts and quiches.

Entry Requirements

  • An interest in baking and pastry making
  • Students will also require the following equipment: apron and non-slip shoes

Course Length

10 weeks.

Course Modules/units

This course is a part-time class where students will develop their gluten free cookery. The class is suitable for complete beginners or for those that want to brush up or explore gluten free cookery techniques.

Students will learn to prepare and cook (a range of):

  • Focaccia and pizza
  • Ciabatta and enriched tin loaf
  • Flat bread/tortilla/Socca
  • Sausage rolls and meat pies
  • Quiches and steamed puddings

Teaching Method(s)

This is a practical hand-on course. Students will learn in a fun and relaxing atmosphere in a well-equipped commercial kitchen. Class sizes also ensure one-to-one attention. In each class students will learn all the tricks of the trade, get to practice the techniques shown and go home with new-found skills.


No assessment involved but you will receive on going feedback from your chef tutor.



Additional costs

All equipment required for the classes will be provided. Ingredients for the course can be provided at basic cost or brought in yourself. We try to be as environmentally friendly as possible. With this in mind, it is helpful if you can bring a few reusable containers with you to take home some of the food you cook.
