Who is this course aimed at?

This is for anyone interested in exploring healthy Mediterranean cooking techniques.  Learn how to build a Mediterranean flavour palate for marinades, pastes and dressings with basic ingredients such as olive oil, citrus and herbs. This course can introduce you to some new kitchen skills and help you be more adventurous with different nutritious ingredients. Sweet and savoury options are available to cover a variety of tastes.

Overview 

An introduction to Mediterranean cookery, discovering techniques for transforming vegetables like eggplants and chickpeas into rich spreads, dips and sauces to preparing meats, fish and seafood for healthy mouth-watering main courses.

Entry Requirements

  • An interest in plant based or vegan free cookery
  • Students will also require the following equipment: apron and non-slip shoes

19 Jan 2021 - 13 Apr 2021, Tuesday evenings.

Course Length

10 weeks.

Course Modules/units

This course is a part-time class where students will develop their cookery skills and explore Mediterranean dishes. The class is suitable for complete beginners or for those that want to brush up or explore new healthy Mediterranean cookery.

Students will learn to prepare and cook (a range of):

  • Pasta and grains dishes
  • Focaccia and stromboli bread
  • Spanish paella
  • Risotto & arancini with mozzarella
  • Mezze & tapas
  • Seafood tagines
  • Coffee granitas and other Mediterranean desserts

Teaching Method(s)

This is a practical hand-on course. Students will learn in a fun and relaxing atmosphere in a well-equipped commercial kitchen. Class sizes also ensure one-to-one attention. In each class students will learn all the tricks of the trade, get to practice the techniques shown and go home with new-found skills.

Assessments

No assessment involved but you will receive on going feedback from your  chef tutor.

Additional Costs

All equipment required for the classes will be provided. Ingredients for the course can be provided at basic cost or brought in yourself. We try to be as environmentally friendly as possible. With this in mind, it is helpful if you can bring a few reusable containers with you to take home some of the food you cook.
