Introduction to Italian Cookery

Entry Requirements
There are no formal entry requirements for this course, but students must have an interest and passion for cookery and want to learn more.

Students on this programme will learn how to produce a range of Italian foods from scratch under the supervision of our Head Chef and pasta-maestro, Gio Achenza. Students will then cook and serve their delicious creations before enjoying these for dinner.

11th May - Pizza Masterclass

18th May – Cucina di Carne (Meat)

24th May - Pasta Masterclass

Entry requirements

There are no formal entry requirements for this course, but students must have an interest and passion for cookery and want to learn more, developing their Italian cookery skills.

Course units

This course provides the opportunity for learners to develop their knowledge and understanding of Italian classics and more traditional Italian recipes and to gain the skills to prepare, cook and finish a variety of Italian specialities including:

  • Focaccia
  • Tiramisu
  • Braciola
  • Culurgiones

Assessments

This course is informally assessed, the main activities will include:

  • Practical tasks
  • Tasting
  • Discussions

Course progression

This course is for students who wish to develop their cookery skills or want to work as chefs and allows students to learn, develop and practise the skills required for employment and/or career progression in the catering and hospitality sector.

This course is a practical, hands-on course and students will learn in a friendly and professional kitchen, under the guidance of expert chef Gio Achenza.

Facilities

Here at York College we have state-of-the-art training kitchens and a superb training restaurant, Ashfields.

This course provides a great introduction to Italian cookery and you may decide to pursue other courses either for pleasure or to enhance your employability/existing skills.
